The Essential Egg Muffins- perfect for breakfast or lunch.


Ingredients

12 eggs.
Fry lite or olive oil.
Butter.
Mushroom or other veg as per personal preference.


Take one muffin try, if is silicon then just spray the inside of moulds with some fry lite, otherwise you can line the muffin tray with actual muffin cases.
Crack two eggs into each.
Put a tiny bit about half a teaspoon of butter into each, or you can leave this out if you have already sprayed the moulds with fry lite.
Then be creative, you can add a few sliced mushrooms into each mould, maybe some chopped turkey, some onion etc.
Place in a preheated oven, 200 degrees centigrade and cook for around 15 minutes. Take out and check like you would with a cake by placing a skewer into the centre of the muffins. If it comes out wet put back into the oven for around 5-10 minutes and check again. Repeat this until the skewer removes clean.
Pop out the egg muffins and leave to cool before chilling in the fridge.
They can be warmed for 30 seconds in the microwave before eating.
Pair them with a yummy salad or avocado.
